Seminyak Sunshine Smoothie

Bali is up there with our list of favourite places (one of the reasons why we have chosen to run one of our 2016 teacher training intakes there!). We like to escape our busy lives sometimes, and we tend to find peace and calmness in the tropical Bali landscapes. The Balinese people are very kind and they live in such a vibrant and rich culture. When we are there, we really feel an essence of freedom and fun, elements that come from the people, the scenes and the amazing fresh and organic food that can be found there! We believe that one of the best ways to taste the local flavours of Bali is by ordering a big, fresh fruit smoothie!

Mike:

“Thick local papaya and ginger juice- that’s where it’s AT! This is what I crave when I think of holidaying in Bali!”

 Suz:

“My favourite Bali drink is thick coconut water with chia seeds- it takes three hours to prepare, but it is ALWAYS worth the wait!”

We love Bali so much that we often recreate these smoothies at home- then we like to kick back, relax and reminisce about our tropical adventures! Here’s a recipe that will take you to Bali in just one sip (no airport required!)

Seminyak Sunshine Smoothie

Ingredients:

1 cup chopped fresh pineapple

½ kiwi fruit

1.5 cups raw coconut water

2 tablespoons chia seeds

4-6 mint leaves

1 tsp chopped/grated fresh ginger

5 ice cubes

Method:

Blend all ingredients except for the chia seeds and the ice cubes.

Add the chia seeds and shake/stir until they are mixed in well. Allow to rest for 5-10 minutes while the chia seeds start to expand.

Add ice cubes and blend the entire mixture for a couple of seconds.

Now, just find a nice palm tree to sit under, close your eyes and sip away at those chilled Bali vibes!
